As the founder of Ecoshe, I am deeply passionate about plant-based cuisine and am committed to sharing this enthusiasm with everyone and am excited for people to see the potential that vegan food has and most importantly its positive impact on health, environment and animal welfare. At Ecoshe, we work with hotels, restaurants, and communities to make plant-forward dining an exciting, accessible, and impactful experience. I truly believe that food is a tool for positive change, and I love helping people realize that plant-based options can be just as indulgent, satisfying, and culturally rich as any other cuisine.
You don’t have to be vegan to support what we do. If you care about better-quality, ethically sourced food—whether that means more plant-forward options or higher welfare animal products—it makes sense to stand with us, whether through action, funding, or moral support.
As an Ambassador for the Plant Based Treaty, I’m driven by the vision of a greener, more ethical world that cherishes all living beings and preserves our planet for generations to come. Understanding the WHY behind the plant-based movement makes the HOW both effortless and thrilling, and I’m delighted to be a part of this movement.

As the founder and director of multiple business units, I lead a diverse team of over 60 employees across various countries. My journey toward a plant-based lifestyle began at age 28 as a personal experiment—alternating one month eating meat and one month without. I quickly noticed a significant boost in my energy levels during the months I skipped meat. Intrigued, I began researching further, and the more I learned, the more I was drawn toward a plant-based way of life.
Today, I remain a strong advocate for conscious food choices, sustainability, and ethical eating. I have given tremendous support to the start-up of Ecoshe and wholeheartedly champion the work Heather and the Ecoshe team are doing to create a more sustainable and compassionate food system.

As the Program Director at Ecoshe, I have the privilege of doing what I love every day—helping people discover the joy and impact of sustainable, healthy food. Whether it’s leading fun plant-based cooking classes, hosting engaging workshops to inspire new flavors, or supporting restaurants in making eco-friendly changes, I’m passionate about showing how food can be a force for good for both people and the planet.
What I love the most is showing people that vegan food is exciting—it’s not just boring salads! A lot of people ask me if I’m vegan. I’m not; I’m a flexitarian who incorporates vegan food into my diet because it’s just that good. As Heather always says, “The world needs more imperfect vegans than perfect vegans.”
With over 3 years of experience in program and project implementation and a degree in International Business, I bring creativity and dedication to everything I do. Outside of work, you’ll often find me exploring new restaurants and indulging my inner foodie—always on the lookout for the next great dish!

I’m Gwen, the Executive Sous Chef of Ecoshe. I'm passionate about turning fresh, locally sourced ingredients into dishes that delight the palate and respect the planet. Every day in the kitchen I get to experiment with bold flavors, try new techniques, and create meals that bring people together. While I’m not a vegan person , but I love cooking with a plant‑forward approach because it lets me honor the animals I care about while still delivering unforgettable taste experiences. My background in culinary arts, combined with a genuine curiosity for sustainable food systems, drives me to design menus that are both creative and responsibly sourced.
When I’m not at Ecoshe Kitchen, you’ll find me testing recipes at home, exploring farmers’ markets, or swapping ideas with fellow food lovers. I’m always on the lookout for the next inspiring dish that tells a story of flavor, compassion, and joy. As the Sales Manager at Ecoshe, I bring years of experience from luxury hospitality, where I learned the art of connection, excellence, and delivering positive experiences. Today, I channel that same passion into something deeper — a space driven by purpose, connection, and transformation.
Ecoshe represents a new chapter for me, a challenge that genuinely inspires me. It gives me the opportunity to learn everyday while sharing a message that truly matters — one grounded in compassion for people, animals, and our planet.
What I love most about my role is connecting with people across all segments and backgrounds: from hoteliers and restaurants to corporates, schools, health and wellness professionals, and individuals. It’s about bringing them around the same table — one where plant-based food is the star. I get to showcase our work, highlight how we support teams & individuals to serve and enjoy more plant-based meals, and prove that plant-based cuisine can be innovative, creative, gourmet, and deeply meaningful. It has the power to make a real positive impact.
